Johnny Carraba’s Mussels in White Wine Sauce
Famed chef Johnny Carrabba helps Vince Gill prepare an Italian feast for his wife, Amy Grant.

Ingredients
- 2 oz. olive oil
- 1 pound cleaned Canadian mussels (available in gourmet grocery stores, says Johnny)
- ¼ yellow onion, chopped
- 6 cloves garlic, chopped
- 1 oz. Pernod liquor
- 8 basil leaves, chopped
- 6 oz. lemon butter sauce
- Juice of 1 lemon
Preparation
- Heat oil in sauté pan.
- Add mussels, cover and cook until shells begin to open, about 2 minutes.
- Add onions and garlic and toss ingredients together.
- Cover pan again and cook for 1 minute.
- Add remaining ingredients and reduce for 2 minutes, uncovered.
- Place in bowl and serve.
Serves 4
