Johnny Carraba’s Mussels in White Wine Sauce

Famed chef Johnny Carrabba helps Vince Gill prepare an Italian feast for his wife, Amy Grant.

Ingredients

  • 2 oz. olive oil
  • 1 pound cleaned Canadian mussels (available in gourmet grocery stores, says Johnny)
  • ¼ yellow onion, chopped
  • 6 cloves garlic, chopped
  • 1 oz. Pernod liquor
  • 8 basil leaves, chopped
  • 6 oz. lemon butter sauce
  • Juice of 1 lemon

Preparation

  1. Heat oil in sauté pan.
  2. Add mussels, cover and cook until shells begin to open, about 2 minutes.
  3. Add onions and garlic and toss ingredients together.
  4. Cover pan again and cook for 1 minute.
  5. Add remaining ingredients and reduce for 2 minutes, uncovered.
  6. Place in bowl and serve.
