Fried Green Tomato BLT

Ingredients

  • 3-4 medium green tomatoes, cleaned and sliced into ½-inch-thick rounds
  • 1 cup mayonnaise
  • 1 tsp. roughly chopped fresh parsley
  • 1 tsp. roughly chopped fresh thyme
  • 1 tsp. minced green onion
  • All-purpose flour
  • 1-2 cups buttermilk
  • Cornmeal
  • 8 slices whole wheat (or any style) bread
  • 4-8 slices mozzarella cheese
  • Leaf lettuce
  • 12 slices of “cooked-to-taste” applewood-smoked bacon

Preparation

  1. Combine mayonnaise, parsley, thyme and onion in blender and set aside.
  2. Lightly salt and pepper sliced green tomatoes to taste.
  3. Dredge tomatoes in flour (both sides), then dip in buttermilk.
  4. Coat tomatoes with cornmeal.
  5. Fry tomatoes in canola oil at 350° until golden brown.
  6. Depending on preference, toast the whole wheat slices prior to sandwich assembly or butter and pan-fry both sides of assembled sandwich afterwards.
  7. Spread herbed mayonnaise to taste on inside slices of bread.
  8. Layer 1-2 slices of mozzarella, leaf lettuce, bacon and fried green tomato.

Makes 4 sandwiches
