Chef Jason Brumm’s Berry Cobbler

Ingredients

  • 2 pints strawberries
  • 2 pints blackberries
  • 1 pint raspberries
  • ½ cup sugar
  • 2½ cups self-rising flour
  • 1 cup powdered sugar
  • 1 tsp. baking powder
  • Pinch of salt
  • ½ cup milk
  • 4 oz. butter

Ingredients for Topping

  • 2 cups heavy whipping cream
  • 1 tsp. vanilla
  • ½ cup powdered sugar
  • Grand Marnier

Preparation

  1. Preheat oven to 375°.
  2. Combine strawberries, blackberries and raspberries in medium bowl.
  3. Add ½ cup sugar, mix gently. Set aside.
  4. Combine flour, powdered sugar, baking powder and salt in a medium bowl and mix well. Add milk slowly to judge consistency and amount.
  5. Place butter in a 4-quart baking dish in oven to melt. Remove from oven. Spoon batter evenly over melted butter.
  6. Spoon berries over batter; do not stir. Bake for 20 minutes or until golden brown.

Preparation for Topping

  1. Whip cream until it becomes light and airy.
  2. Add vanilla and sugar and continue to whip until reaching desired texture.
  3. Add Grand Marnier to taste.

Serves 6
